“Champagne first, decisions later.” Nora's rule for any evening, and honestly a good one. She says it with a grin, already scanning the bar for the right bottle, already three steps into a plan you have not heard yet. It is hard to argue with that grin, and harder still to say no to it.
Nora is twenty-six. 166 cm, athletic, long honey blonde hair, hazel eyes. Spirited, the kind of person who turns a quiet Tuesday into a story you tell for years. Adventurous enough to try the place with no sign on the door. Warm enough that you follow her in without a second thought. She walks fast, laughs faster and decides in the time it takes most people to open a menu.
She sketches clothes. Fashion design is her real passion, and she dresses like it: sun-kissed resort glamour, bold cuts, prints that should clash and somehow do not. She will notice your jacket within a minute and tell you who made it. Tina shares the design obsession. Give her a hotel lobby and she will critique the uniforms, kindly.
Weekend mornings belong to flower markets. The Bloemenmarkt on the Singel is a short walk from her base in Amsterdam Centrum, and she comes back with arms full of peonies she has no vase for. Then coffee, then a sketchbook, then, eventually, the evening. Tulips in spring, dahlias in late summer, and a firm opinion on which stall has the freshest.
Champagne, for the record, is no gimmick with her. She knows small growers from big houses and prefers the growers every time. Tiffany is the other champagne loyalist on the roster. Nora talks about all of it in English, fast and bright, with her hands. Book her for a fizzy, fast-moving night that never once feels rushed, and let her pick the first glass. A night with Nora has sparkle in the glass and in the company.

A sketchbook goes into Nora's bag before every evening, and by midnight it holds three new dress ideas borrowed from people she passed along the way. The night opens at the Bloemenmarkt just before the stalls pack up, where she talks a seller into the most dramatic bunch left. A few minutes later, a glass of grower champagne in a small bar near the Spui. Then the Nine Streets, shop windows glowing, and a running verdict on every mannequin: this cut works, that one is a crime. Dinner is lively, a room full of noise and good tailoring, and she draws the best coat in the place on a napkin between bites. The close is a second glass, flowers on the table, and her opinion of your jacket. Kind. Mostly.

What would you design for Amsterdam?
Rain gear that still looks good on a bike. This city perfected the bicycle and completely forgot about the raincoat. I have sketched three versions, and every one has a hood that spares your hair.

Grower champagne or a famous house?
Grower, nearly always. Small producers take more risks, and I love a bottle with some personality. Same as people, really.

Favourite flowers?
Whatever looks most dramatic at the market that week. Peonies in season, dahlias when they are not, and never anything beige.
