The hair is what people clock first. Long, light brown, sun-kissed at the ends, catching whatever light a Jordaan bar has left at 1 a.m. The second thing is quieter and lasts longer: Bianka is actually listening. Not nodding. Listening. Forty minutes after you mention something in passing, she comes back to it with exactly the question you hoped someone would ask. A rare skill at that hour.
Twenty-three years old, 165 cm, curvy, hazel eyes that swing from warm to mischievous without warning. Sultry is the word most people reach for, and it fits. But warm and attentive do the real work. She reads a table fast. She knows when to fill a silence and when to leave it alone. Her look follows the same instinct, sultry boudoir elegance: black lace, long gloves, a dark and polished finish made for candlelight. At a crowded table she is the one making sure everyone has a full glass and a turn to talk.
Her world smells of garlic, old silk and a good red. She cooks Italian the slow Sunday way and will defend her carbonara against anyone. Vintage fashion is the other obsession, flea market finds, fifties cuts, gloves nobody else would dare wear to a restaurant. Then the wine. Hand her a list and she picks the bottle you would never have ordered, and it turns out to be the right one. Luna shares that talent, if you ever want a second opinion. Ask her what to eat in Amsterdam and you get a list, not a shrug, with notes on which places are worth the queue.
She is based in Jordaan, among the narrow canals and brown cafés west of the ring. English is how she talks, flirts and argues about pasta. Book dinner first if you can. She takes menus seriously, orders for the table without asking twice, and turns a plain Tuesday reservation into the part of the trip you keep telling people about.
A Night
With Bianka
Three glasses, poured blind. That is how Bianka likes to open an evening, at a narrow wine bar on a Jordaan corner where the owner plays along. She guesses the grape, you guess the region, and she wins without looking smug about it, almost.
Dinner is the long part. A small room where the pasta is rolled by hand and the menu is chalked on a board she reads once and memorises. She orders for both of you, asks the kitchen one precise question about the sauce, and gets a grin back. Between courses she tells the story of the evening gloves she found for almost nothing in a vintage shop. Dessert is shared, coffee is short, and the walk back goes the long way, along the Egelantiersgracht, because she insists the water there is the quietest in the city.
